Warm Oats

A warm breakfast with a few things from the cupboard.

Read the recipe

What you need½ cup rolled oats; 1½ cups water or milk; a pinch of salt; a little honey; a few slices of pear or apple (optional).

  1. Bring the oats, liquid and salt to a gentle simmer.
  2. Cook slowly, stirring, until the oats swell and soften.
  3. Take off the heat and let it rest for a moment to thicken. Stir in a little honey and add the fruit, if using.

Miso with Greens

A quick bowl of soup, with greens and optional soft tofu.

What you need1–2 tablespoons miso paste; 2 cups water; a handful of chopped soft greens; 1 sliced scallion; a few cubes of soft tofu (optional).

  1. Warm the water without boiling it. Add the greens and tofu and let them soften for a minute.
  2. Dissolve the miso in a little warm water from the pot, then stir it back in.
  3. Scatter the scallion over the soup and serve warm.

Chickpea & Spinach Stew

25 minutes · Serves 2 · Page 40

One pot, ordinary ingredients, and enough for two.

What you need1 can drained chickpeas; 2 handfuls spinach; 1 chopped onion; 2 sliced garlic cloves; 1 chopped tomato; 2 cups water; 1 tablespoon oil; salt to taste.

  1. Warm the oil. Cook the onion and garlic until soft. Add the tomato and cook for a few minutes.
  2. Add the chickpeas and water. Simmer gently and let the flavours join.
  3. Stir in the spinach until it wilts, then add salt. Serve warm with the broth.
